Chicken Parm

Yolo! Ok, work in progress. I need to up my presentation a bit but any who, this is a delightful easy dinner for you ladies.

Ingredients:

  • chicken breast
  • egg white
  • almond meal
  • grated parm cheese
  • cracked pepper
  • Italian seasonings
  • spaghetti squash
  • low fat ricotta
  • marinara

Mix a small bowl of almond four with 2-3 TB of parm cheese and a pinch of crack pepper and Italian seasonings. Cover chicken w/ egg white and roll in flour mix. Place on sheet and bake at 375 for 20-30 min. Optional: Turn to broil on HI for last few minutes for crispier crust. Cook spaghetti squash. Serve with scoop of ricotta and marinara.
