Supah Bowl Pahty Healthy(ish) Treats

So I want to start off my saying how much I really enjoy these guest posts!  Its so nice to give you a glimpse into our world, both in and outside of the gym!  So before I jump into some healthy recipes for your upcoming super bowl parties, I want to give you a quick back story on what I’m most passionate about…and that’s Football!  And not just any football, New England Patriots Football!

I’m lucky enough to have married a man that has had season tickets for 41 years. I’m even luckier to get one of those tickets for myself! So I get to enjoy every home game at Gillette Stadium! The day is so much more than just going to the game.  It’s prepping for the game.  That includes knowing the weather and planning accordingly (which if you all don’t know I’m the Kfit Chief Meteorologist). It’s also planning a menu, shopping for the food, preparing the food, etc…basically it’s a lot of work and consumes my entire weekend but I wouldn’t trade it for the world!

Our menu is usually based around the weather, how many people, the team we’re playing…basically a lot of factors go into deciding.  But we do have some staple numbers that we have every game, rain or shine.  Now if I ever showed up with a “healthy” version of anything I’d probably be banned from the tailgate.  That probably explains why I look like swollen tick through football season, well that and the drinking for 12 hours straight!

But with that being said I’m going to take a few of our staple dishes and put a healthy spin on it for you (and if you want the “un-healthy” recipe hit me up with a message 😉

This little ditty was posted by Coach Kerrie recently on the blog and is a great healthified version of our tailgate must have:

French Onion Dip

Recipe From The Kitchn

Ingredients: 2 cups

2 T butter
1 container Trader Joes minced onions (can do own, probably 2 onions)
Pinch of salt
1 tsp minced garlic
1 tablespoon Worcestershire Sauce
2 cups plain Greek-style yogurt ( i used 2%)
Freshly ground black pepper
1 teaspoon salt

Steps:

1)Add the butter,onions and pinch of salt to a large sauté pan. Cook  medium-low heat, stirring frequently, for about 15 minutes. Add small amounts of chicken stock if need.

2)Then add the minced garlic and stir for several seconds.

3)Turn off the heat and stir in the Worcestershire sauce. Let cool

4) Once cooled stir w/ yogurt. Add Salt and pepper to taste. Definitely let this sit an hour before tasting. Even a day, it becomes more flavorful!.

5) Serve up with choice of dippers! I used my Joseph Tortilla Chips and celery. Also served over a sweet potato and chicken for lunch!

The next app we have at every game is Buffalo Chicken Dip.  Recipe from Gimme Some Oven:

INGREDIENTS:

4 oz. (half a block) reduced-fat (or fat-free) cream cheese, softened

1 cup plain Greek yogurt

1 cup shredded part-skim Mozzarella cheese

1/2 cup hot sauce (I prefer Frank’s)

1/2 cup crumbled light blue cheese

1 Tbsp. ranch seasoning (optional)

3 cups shredded cooked chicken

DIRECTIONS:

TO MAKE IN THE OVEN:

Preheat oven to 350 degrees F.

In a large bowl, stir all ingredients together until well-mixed. Transfer mixture to a small greased baking dish, and bake for 30 minutes or until the cheese is melted and the edges begin to slightly brown. Remove and serve immediately.

TO MAKE ON THE STOVE:

Stir all ingredients together in a medium saucepan until combined over medium-low heat. Continue heating for about 10-15 minutes, stirring occasionally, until the cheese is melted and the dip is simmering. Remove and serve immediately.

TO MAKE IN THE SLOW COOKER:

Stir all ingredients together in a slow cooker until combined. Heat on low for 4 hours or until the cheese is melted. Serve immediately.

And last here is one that we don’t tend to have too often at the games but I’m a big fan and will definitely be serving at my house on Super Bowl Sunday and that is a Seven Layer Dip:

The Best Healthy Seven Layer Dip – Recipe from Fannetastic Food:

Ingredients:

3 medium-sized ripe avocados

2 Tbsp. lemon juice

½ tsp. salt

¼ tsp. pepper

1 & ½ C plain Greek yogurt

1 package taco seasoning mix (or make your own mix)

2 cans (9 oz. each) bean dip or 2 cans refried beans — or make your own, or just use canned rinsed/drained whole black or pinto beans!

1 bunch green onions, chopped (optional)

3 medium-sized ripe tomatoes, chopped

2 cans (3 ½ oz. each) pitted ripe sliced olives, drained (optional)

1 package (8 oz.) grated sharp cheddar cheese

Instructions:

  1. Peel, pit and mash avocados in a bowl with lemon juice, salt and pepper (or put in blender). If you’re in a hurry and don’t have any ripe avocados, you can also substitute 2 containers of mildly seasoned guacamole dip from the refrigerated section at the grocery store.
  1. In another bowl, combine yogurt and taco seasoning mix.
  1. To assemble:

Spread bean dip/refried beans on a LARGE shallow serving platter.

Spread avocado mixture over bean dip.

Spread yogurt-taco mixture over the avocado mixture.

Sprinkle with the chopped green onions, then the tomatoes, and finally the olives.

Cover with the grated cheddar cheese.

  1. Serve chilled with your choice of corn chips. Enjoy!
