My Crock Pot has been getting some serious love. The latest creation…some fall off the bone short ribs.
I hunted for a recipe and ended up going with a variation of this recipe. Mainly because it had the smallest ingredient list AND no flour, corn starch etc. Which a lot of other recipes had. You can feel free to add that stuff if you want it to be a thicker gravy. But I dig the broth, it doesn’t weigh me down (and obviously it’s healthier). Seriously, this was beyond easy. Served with a side of baked sweet potato, it was spectacular.
Crock Pot Short Ribs
Ingredients:
- 2 1 pounds 3-inch-long beef short ribs ( I purchased from Whole Foods on sale)
- Coarse kosher salt
- 1 cups dry red wine
- 1 12 ounce can diced tomatoes in juice
- 1/2 6-ounce package sliced button mushrooms
- 1/2 cup finely chopped onion
- 1 T minced garlic
- 3 fresh Italian parsley sprigs (or dry Italian seasonings)
- 1 bay leaves
- 1 large sweet potato (for the side)
Steps:
- Toss some salt and pepper on the meat and place in Crock pot.
- Place remaining ingredients in Crock pot.
- Cook on low for 8 hours, stir occasionally.
- Spoon off oil that settles at top prior to serving. These suckers have a lot of fat..so be sure to do this throughout.
- Bake sweet potato in Microwave and serve it up!
